Haitian Pikliz is a spicy and tangy condiment very popular in Haiti. It can accompany almost any dish, especially griot (fried pork), fried chicken or fish, and bannann peze (fried plantains).

Preparation

Mix the following ingredients in a large glass jar: 2 cups of finely shredded cabbage, 1 grated carrot, 1 bell pepper cut into thin strips, 1 thinly sliced onion, 2 to 3 sliced chili peppers (Scotch Bonnet or habanero), 3 crushed cloves of garlic, ½ teaspoon of salt, and pepper to taste.

Cover with 1 cup of vinegar, close the jar, and let it marinate for 24 to 48 hours. The longer it rests, the better it gets!

Storage
Pikliz keeps for several weeks (even several months) in the refrigerator.
